It's really all about being 'employment versatile' in our unsure economy. Mabey it's time that folks branch out just a bit. A 'CYA attitude'. Nothing wrong with that. We've all heard about not putting all our eggs in one basket.

Well...what better time than NOW to try our hand at different work experiences. Mind you, if you have a secure job at present (but who's job is really secure any more?) you might still think about having something else to fall back on.

What starts out as a hobby in one instance, has proven to be financially life-saving in in other cases.

These folks have the right idea:

LONDON (Reuters) - Britain's recession has prompted a wave of self-help trends ranging from bee-keeping to growing vegetables -- and one of the fastest growing is DIY butchery.

Witness the Ginger Pig butcher's shop in the fashionable Marylebone area of London, where nine men and three women, dressed in white coats stained with blood, are learning the tricks of the trade.

Some just want to know more about food, others are City high-fliers with time on their hands.

They pay 120 pounds ($195) for a three-hour class, complete with beaujolais and lamb stew afterwards.

"They want something new to do and something cheaper than expensive restaurants," says shop manager Perry Bartlett.

"They come here and cook an equally good meal and have an education as well about meat.

"We have people from all walks of life. We've had surgeons, dentists, doctors, and normal people from down the street ... and lots and lots of girls."

The shop opened in 2003 and gets organic meat from the Ginger Pig farm in North Yorkshire, where rare breeds such as Longhorn and Belted Galloway cattle, and Tamworth pigs are reared.

Bartlett plans to build a bigger classroom holding up to 20 students, and expects strong demand in the run-up to Christmas.

In the current economic climate, he said more and more city bankers and businessmen were looking for fun and social gatherings.

"It was a birthday gift from my girlfriend," said Mark Mcardle, a 22-year old private banker, standing in front of pig carcasses hanging from hooks in the shop.

"She is not here tonight, but she thought it would be a good gift for me to become a professional butcher, so I'll have a go at it."

Borut Kozelj, Bartlett's assistant, holds a Master's degree from a butchery school in Slovenia and is one of about 20 butchers working at the Ginger Pig.

"The business is exploding," he said. "More people want to cook at home in the recession, eat fresher meat and know where it is produced."

Participants learn about different cuts of meat, how to prepare fillet, sirloin, rump or rib eye, and can take their juicy piece home afterwards.[/offsite:1tf19feg]

You can give canning lessons.

There might be gold in them thar jars.

Canning is pretty straight forward lex :P

I've thought about teaching people some of the tricks for "from scratch" cooking though...

making pasta, ice cream etc...

the only thing is... it takes a SHITLOAD of time to do all that... so if I took too much time away, and tried to teach people, I wouldn't be able to do it myself...

I just wish people would wise up, and stop buying non-local shit... every time you buy something from a "Big box" store, or something made/grown outside your local area, you're actually shooting yourself in the foot...

I don't eat oranges, bananas, pineapples or avacados.

If I must buy something that isn't grown here, I buy it from a local business... so my coffee, tea, and tobacco come from local shops... but... there are probably only 3 or 4 things (such as those) that I consume that aren't grown here.

I get Fair Trade coffee and tea from my local food co-op, and tobacco from my favorite pub 3 blocks away...

I don't eat oranges, bananas, pineapples or avacados. well most people do. they need the potassium from bananas, vitamin C from the oranges and pineapples, and guacamole for cinco de mayo.

ya get more potassium from sweet potatoes than you do bananas...

you get vitamin C from other fruits too, apples, tomatoes, Melons, etc...

Its not for everyone... and it does take some planning to make sure you end up with your vitamins, but it can be done...

Speaking of Vitamine C... I gotta get a shitload of cabbage this next week to start the batch of sauerkraut for the winter... Sauerkraut has Vitamin C, Iron, Calcium etc... Its a very good winter food for vitamins...

So I shoot myself in the foot. So what? I decided that organic farming would've been my nightmare in waking daylight. I don't care about helping the things I eat grow. I just eat things that grow... and then I grow, which is slow death anyway.... and as long as I'm not bothering anybody, they can grow and die alongside of me if they want...
