Ok, one of my faves.

Get a big, deep plate.

Melt 3 or 4 tsp's of butter in it.

Layer a few (7-10) slices of
your fave lunch meat in the
melted butter.

Liberally cover with Italian Olive
Salad and your fave shredded
cheese.

Nuke until the cheese melts, top with
Cavenders Seasoning and some
Siracha Hot Chili Sauce.

Jesus......I'm drooling...

Kafta moukara (sp?). Bit like a Morrocan meatball thing.

Meatballs: Mince beef, add ground cumin (1-2 tsp), cayenne (1-2 tsp), salt, black pepper, chopped parsley. Make lots of balls.

Brown all over in a frying pan with few teaspoons of olive oil, then remove.

Add fine-chopped onion to frying pan. Fry lightly, till soft and caramelised (about 10-15mins). Add chopped tomatoes (1 can), 2 crushed garlic cloves, cumin (1 tsp), cayenne (1tsp), paprika (2 tsp), salt and pepper to taste (maybe some tabasco or other hot sauce if you like it even spicier). Cook for about 10mins.

Put meatballs in oven dish, cover with sauce. Break about 3-4 eggs on top (make little pits for them). Cover, cook for about 10-15 mins at around 180'C.

Throw on a plate, add chopped coriander. Eat with whatever fresh bread takes your fancy. Maybe Pitta, or other flatbread, maybe some salad as well.

Consume with nice red wine.

Nom! Nom!

Briam is also great (esp. in summer!; a greek vegetable bake thing).

this is some of my all time favourites.
im not a big eater but i enjoy cooking new things as much as i enjoy tasting them.


Stuffed 'shrooms

5 fresh mushrooms. i use regular mushrooms of a medium size
1 +1/4 teaspoon veg oil. i have used olive oil.
1 + 1/4 teaspoon minced garlic - i have used garlic powder
95g or 3/8 (8oz) pack soft cream cheese - i use philadelphia extra light 5%
2 tablespoon parmesan
1/8 teaspoon ground black pepper
1/8 teaspoon onion powder
*optional* 1/8 teaspoon cayenne pepper (i dont use this as wifey hates hot peppers)

preheat oven 350f / 175c. spray flat baking tray with cooking spray.
clean mushrooms with damp towel if needed (NEVER wash under water)
break off mushroom stems and chop them very finely. (keep mushy caps intact)

heat oil in frypan and medium fry garlic + 'shroom stems until moisture disappears. dont burn the garlic. you want it lightly fried. put aside to cool.

get the softened cream cheese + add cooled shroom/garlic mixture, parmesan, pepper, onion powder, (cayenne powder if reqd too)
mix should be very thick. spoon the mixture into the 'shroom caps generously.

bake for 15-20mins or until 'shrooms are hot and have liquid forming under them.

chicken piccata - one of my favourites.

500g (1lb) chicken breast fillets. Can be done whole, but i like to slice mine in half so its not so thick and chop in half so i get 4 large fillet like chunks per breast fillet.

Seasoned Flour coating.
mix together:

1/4 cup flour
1/8 teaspoon garlic powder
1/8 teaspoon paprika

------------

other ingredients required:

egg
1/4 cup butter
3 tablespoon lemon juice
2 teaspoons chick boullion powder with 1/2 cup boiling water.
i substitute in 3/4 cup regular Chicken stock instead of the hot water/boullion..

beat 1 egg and 1 tablespoon of lemon juice.
dunk chicken into lemon egg mix, then roll chicken in seasoned flour to coat well.

melt butter in saucepan and lightly fry seasoned chicken until golden brown, add chicken stock (or hot water/boullion) and lemon juice, cover and simmer gently for 20minutes.
turn chicken halfway through (at 10 mins)

you should end up with a lovely chicken + lemon flavoured gravy around the cooked chicken.

serve with rice or mash potato.

i make this one and freeze it in single serve containers for the wifey to take to work for dinner - she works the afternoon shift in the city and needs to take a healthy meal.

Vegetable Soup (i hate calling it a low calorie vegetarian soup)
serves 10. (average size bowl serving)

1 cup diced onion
2 teaspoons crushed garlic ( i just chop mine finely, i dont have a good crusher)

1 cup small florets broccoli
2 cups sliced carrot
2 cups sliced zuccini
2 cups sliced celery
3 cups raw pumpkin, diced small
3 cups potato, diced small

3/4 cup dried barley soup mix. i cant find this so i used a "mackenzie's dried soup mix" which contained barley
4 teaspoons vegetable stock powder
12 cups water (obviously boiling in a large pot)

saute onion + garlic in a frypan for a few minutes, then add to the pot of boiling water along with all other ingredients.

Cover and simmer for 1 + 1/2 hours.
use a blender to puree' all ingredients into a smooth texture.


I have just done a double batch of this today so heres some pictures.
When i first done this recipe i didnt have a pot, and a large saucepan is just a wee bit too small. So i sent wifey out to get me a large cooking pot, well she come home with this big 13 litre stainless steel monstrosity which barely fits in the cupboard - but it is a kick arse quality pot.

Shredded pork burrito with cream cheese & roasted green chilis

BBQ some pork loin. Shred into bit size pieces. On the stove put in half a block of cream cheese and small cna of roasted green chilis. Put this on low and let it melt, stir.

Once it's melted add the shredded pork, stir and spoon into warmed tortillas.

Garnish as you please.

Get some oranges, mutilate the shit out of them and add them to boiling water. Put in some soy and hoisin till i say it taste good. Add a bit of corn startch till it looks right. Fry up some breaded chicken chunks.. mix that shit in a wok with some green onions, lime zest, tiny bit of peanut oil and some chilli peppers. Order chinese food cause you fucked it up again. Leave pot and wok out for two weeks until the sauce is firmly cemented.

Seems to me the master chef skills of Amkon might have been of a greater order in mid-2008.

The question is, should anything be done about it?

Thankyou Susan and Killer. I will do the "big reveal" on my chili sauce recipe (which involves a forced marriage) OR my borscht recipe (which is very red and goes bright pink) when either reaches three expressions of interest, and if neither ever does, I have a song for the occasion.

The treat is made by mixing breast milk with Madagascan vanilla pods and lemon zest. The milk has been donated by women who were paid £15 for every 10 ounces of their bodily fluid.
The dessert is offered up in a martini glass to those daring enough to try it for £14. Liquid nitrogen is also poured into the glass using a syringe.
Despite its unusual ingredient, the company said the "organic, free-range and totally natural" product sold out when launched today.
"The response has been amazing. People at first say it's disgusting because it's a bodily fluid, but so is cow's milk," said owner Matt O'Connor. "People love it when they try it."
The company paid women who donated their breast milk after health screening. The Food Standards Agency says there are no specific laws prohibiting businesses from selling human milk products, but they must comply with general food safety laws to ensure the product is safe for consumption.
The Icecreamists say Baby Gaga will be on the menu as long as the supplies keep flowing.

4. Eat the yummie food.
5. Pay the check and leave generous tip to ensure just as good service and yummie food next time you show up.
6. Go home and leave the dirty pans and dishes behind.

Latkes

1. Finely grate 3 Idaho baking potatoes
2. Rinse in ice cold water
3. Add i teaspoon minced garlic and 1 grated Vidalia onion
4. Add 1 half teaspoon Kosher salt, pepper and one well beaten egg
5. Mix all that crap together
6. Heat 1/4 inch of safflower oil in cast iron pan until excruciatingly hot.
7. Drop tablespoon dollops of mixture in pan flattening with a big spoon
8. Fry for 1 minute or until brown and flip over with spatula, frying other side or an additional minute or so.
9. Dry on paper towels
10. Serve with sour creme or creme fraiche.
11. Eat

Roast fillet of beef

Season fillet with salt and pepper. Wrap with streaky bacon. Place in ovenproof dish with fresh rosemary and garlic. Cook on medium heat for about one hour or less, depending on how you like your beef.
